6 merguez sausages (UK available)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, sliced

2 garlic cloves, minced

1 tbsp harissa paste

2 tbsp olive oil

Fresh coriander (optional)
Steps
1. Heat Pan
Warm olive oil in a skillet over medium heat.
2. Sear Merguez Sausages
Cook merguez sausages for 5–7 minutes until browned. Remove and set aside.
3. Sauté Vegetables
In the same pan, cook peppers and onion for 5 minutes until soft.
4. Add Flavour Base
Stir in garlic and harissa paste. Cook 1 minute until fragrant.
5. Return Sausages
Place merguez sausages back into the pan. Cover and simmer 5 more minutes.
6. Garnish & Serve
Sprinkle with chopped coriander if using. Serve hot, straight from the pan.
