Produced in the mountainous regions of Spain where wild thyme grows, it has a dark colour with pretty light-brown highlights. It is harvested from May onwards, but the quality of the honey depends on the weather. It is therefore a rare honey. Its unique flavour, a blend of fruity and tangy aromas, makes it a very popular honey with connoisseurs.
