A flaky puff pastry tart topped with slices of Toulouse sausage, roasted peppers, and melted cheese — ideal for brunch or lunch.
Ingredients:

3 Toulouse sausages, sliced

1 sheet puff pastry

2 roasted red peppers, sliced

1 cup grated Gruyère or cheddar

1 small onion, thinly sliced

1 tbsp olive oil

1 tsp fresh thyme

1 egg (for pastry glaze)
Instructions:

Preheat oven to 200 °C. Sauté onions in olive oil until soft.

Roll out pastry on baking sheet; layer onions, peppers, sausage slices, and cheese. Sprinkle thyme.

Brush edges with beaten egg. Bake for 30–35 min until golden and puffed.
