Recipe – Toulouse Sausage & Lentil Stew with Greens

Description

A nourishing, one-pot stew of earthy lentils, wilted greens, and smoky Toulouse sausage — quick and wholesome.

Ingredients:

  1. 4 Toulouse sausages, cut into chunks

  2. 200 g lentils (green or brown), rinsed

  3. 1 onion, diced

  4. 2 garlic cloves, minced

  5. 750 ml vegetable or chicken stock

  6. 150 g kale or spinach, chopped

  7. 1 tsp smoked paprika

  8. 1 tbsp olive oil

Instructions:

  1. In a large pot, heat oil and brown sausages. Remove and set aside.

  2. Cook onion and garlic until fragrant, stir in paprika and lentils.

  3. Return sausages, add stock, bring to a simmer, cover, and cook ~30 min until lentils tender.

  4. Stir in greens 5 min before end, cook until wilted.
