Ingredients

800g onions, thinly sliced

2 tbsp butter

1 tbsp olive oil

1 litre beef stock

100ml dry white wine

Salt

Black pepper

4 slices baguette + 100g grated Gruyère
Instructions
1. Caramelize Onions
Melt butter with oil in a large pot. Cook onions over low heat 30–40 min, stirring, until deep golden.
2. Deglaze with Wine
Add wine. Scrape bottom of pot. Simmer 5 min.
3. Add Stock
Pour in stock. Season with salt and pepper. Simmer 20 min.
4. Toast Bread
Toast baguette slices until crisp.
5. Preheat Grill
Set oven grill to high.
6. Fill Bowls
Ladle hot soup into ovenproof bowls.
7. Add Bread and Cheese
Place toast on soup. Top with cheese.
8. Grill Until Golden
Grill 2–3 min until cheese bubbles and browns.
