Layered vegetables baked under a blanket of creamy raclette cheese—bright, flavourful, and simple to prepare. A perfect side or light main.
Ingredients:

1 courgette (zucchini), sliced

1 red pepper, sliced

200 g mushroom, sliced

200 g sliced raclette cheese

1 tbsp olive oil
-
Salt & pepper

Fresh parsley, chopped (optional)
Instructions:

Preheat oven to 200 °C (400 °F). Sauté vegetables in olive oil until just soft.

In a baking dish, arrange veggies and top with raclette slices.

Bake 15–20 minutes until golden and bubbly. Garnish with parsley.
