Quick Cassoulet with Sausage & Beans is a simplified version of the French classic. Packed with hearty beans, savory sausage, and aromatic broth, it’s perfect for a comforting weeknight meal without the long cooking time.
Ingredients

4 good-quality sausages

1 can (400g) cannellini beans, drained

1 onion, chopped

2 garlic cloves, minced

1 can chopped tomatoes (400g)

1 tsp smoked paprika

1 tbsp olive oil

Salt & pepper
Steps
1. Brown Sausages
Heat olive oil in a pan. Brown sausages all over. Set aside.
2. Sauté Aromatics
In same pan, cook onion and garlic for 3–4 minutes until soft.
3. Add Tomatoes & Paprika
Stir in chopped tomatoes and smoked paprika. Simmer 5 minutes.
4. Add Beans & Sausages
Add beans and return sausages to pan. Season with salt and pepper.
5. Simmer
Cover and simmer on low heat for 15 minutes.
6. Serve Hot
Spoon into bowls. Serve with crusty bread if desired.
