Ingredients

2 large leeks (white & light green parts), sliced

Instructions
1. Sauté Leeks
Melt butter in pot. Sauté leeks gently for 5 min until soft, not brown.
2. Add Potatoes
Stir in diced potatoes. Cook 2 min.
3. Add Liquid
Pour in water or stock. Season lightly. Bring to simmer.
4. Simmer Gently
Cover and cook 20–25 min until vegetables are tender.
5. Blend Smooth
Use blender for smooth finish or mash lightly for rustic style.
6. Adjust Seasoning
Add salt, pepper to taste.
7. Add Cream (Optional)
Stir in cream for richness.
8. Serve Hot
