4 chicken thighs, bone-in, skin-on

200g pearl onions or shallots

200g mushrooms, halved

3 garlic cloves, minced

300ml dry white wine

150ml chicken stock

2 tbsp olive oil

Fresh thyme sprigs
Steps
1. Brown Chicken
Heat olive oil in a pot. Brown chicken on both sides. Remove.
2. Sauté Aromatics
Add onions, mushrooms, and garlic. Cook 5 minutes.
3. Deglaze with Wine
Pour in white wine. Scrape up brown bits. Simmer 3 minutes.
4. Add Chicken & Stock
Return chicken to the pot. Add stock and thyme. Bring to simmer.
5. Simmer Gently
Cover and cook 30 minutes on low, until chicken is tender.
6. Reduce Sauce
Uncover and simmer 10 min to thicken sauce slightly.
7. Serve
Pair with creamy mash, crusty bread, or buttered noodles.
