Recipe – Classic French Butter Croissants (Croissants au Beurre)

Description

Classic French Butter Croissants are flaky, golden pastries with delicate, buttery layers. Made with real French butter and a traditional laminated dough, they’re perfect for breakfast, brunch, or a luxurious snack any time of day.

Ingredients 

  • 250g strong white bread flour

  • 30g sugar

  • 5g salt

  • 5g instant yeast

  • 150ml cold water

  • 150g French butter, chilled

  • 1 egg (for egg wash)


Steps

1. Make Dough
Mix flour, sugar, salt, yeast, and water. Knead into a smooth dough. Chill 1 hour.

2. Prep Butter Block
Shape French butter into a flat square between parchment. Chill until firm.

3. Laminate Dough
Roll dough into a rectangle. Encase butter. Roll, fold, chill. Repeat 3x (classic turns).

4. Shape Croissants
Roll out dough. Cut into triangles. Roll tightly into croissant shape.

5. Proof
Place on tray. Let rise at room temp 1.5–2 hrs until puffy.

6. Bake
Brush with egg wash. Bake at 200°C (180°C fan) for 15–20 min until golden.
