
Description
Choucroute Garnie is a traditional Alsatian dish featuring tender sauerkraut slow-cooked with sausages, pork, and aromatic spices. This hearty, comforting meal delivers robust flavors and pairs perfectly with mustard and a glass of white wine.
Ingredients

1kg sauerkraut, rinsed and drained

4 smoked sausages (e.g. Montbéliard)

200g smoked bacon or pork belly

4 slices salt pork or ham hock

1 onion, sliced

2 garlic cloves, crushed

250ml dry white wine (Riesling)

1 bay leaf + a few juniper berries
Steps
1. Prepare Base
In a large pot, cook onion and garlic in a little fat until soft.
2. Add Sauerkraut
Layer sauerkraut with bay leaf and juniper. Stir gently.
3. Add Meats
Tuck in sausages, bacon, and salt pork.
4. Pour Wine
Add white wine. Cover and simmer on low for 1.5 to 2 hours.
5. Serve
Plate meats over a warm mound of sauerkraut. Serve with mustard and boiled potatoes if desired.
