Almond Croissants are the perfect way to transform day-old croissants into a luxurious pastry. Filled with rich almond cream, topped with sliced almonds and a sweet glaze, they’re crisp on the outside and soft inside — perfect for brunch or a sweet treat.
Ingredients

4 day-old croissants

100g ground almonds

100g sugar

100g French butter, softened

2 eggs

1 tsp almond extract

100ml water

Icing sugar (to finish)
Steps
1. Make Almond Cream
Beat butter, sugar, ground almonds, 1 egg, and almond extract into a smooth paste.
2. Make Syrup
Simmer water with 1 tbsp sugar. Cool.
3. Prep Croissants
Slice croissants open lengthwise. Brush insides with syrup.
4. Fill
Spread almond cream inside each croissant. Close gently.
5. Top & Bake
Spread more almond cream on top. Sprinkle with flaked almonds if desired.
6. Bake
Bake at 180°C (160°C fan) for 15–18 min until golden and set.
7. Dust & Serve
Cool slightly. Dust with icing sugar. Serve warm.
