Based on the traditional know-how of Jules Bordeau and Anna Chesnel, we offer our goose reference. We slowly confit the meat in duck fat with honey, vinegar, salt and pepper to obtain a delicate and generously fibrous texture. We choose our meat carefully: the lack of geese from French farms leads us to select meat from within the European Union.
