This small orange or white cone-shaped cheese is named after the capital of the Avesnois, near Maroilles.Boulette d'Avesnes is made almost entirely from broken over-ripened Maroilles (gaffus) and unripened Maroilles. These Maroilles pastes are reground and flavoured with pepper, salt and tarragon before being shaped by hand into a cone.
