Product Description
Boulette d'Avesnes is a soft cow's cheese made from a blend of matured and fresh maroilles with a particularly strong character. It's amazing name comes from the town of Avesnes, where it was originally produced. It is matured for 2 to 3 months in damp cellars with salt water washing. The Avesnes cheese is shaped like a dumpling, remixed and handmade. It is made from broken Maroille paste and flavoured with tarragon, parsley and cracked pepper. It has a conical shape and is shaped by hand. It is sometimes covered with paprika or roucou, which gives it a reddish-brown colour and a slightly spicy, pungent taste. To be kept between 0 and 8°C.
