Produced in the Jura Mountains, Comté cheese dates back to the Middle Ages, and was used as a "guard" cheese, to anticipate winter food reserves. It is made exclusively from the raw milk of French Montbéliarde or Simmental cows. The apparent crystals in the cheese are the mark of a successful maturation.
