Ingredients:

4 Toulouse sausages

400 g canned white beans (e.g. haricot)

1 onion, chopped

2 garlic cloves, minced

400 g crushed tomatoes

2 sprigs thyme
-
150 ml chicken stock

1 tbsp olive oil
Instructions:

Preheat oven to 170 °C. Brown sausages in olive oil, remove and set aside.

Sauté onion and garlic until soft, then stir in tomatoes, stock, beans, and thyme.

Nestle sausages into bean mixture in an ovenproof dish.

Bake, covered, for 1½ hr until sausages are cooked and sauce thickens.
