Potjevlesch is a northern speciality dating from the 16th century. It is a terrine of lean pork, chicken, and rabbit meat. The meat is cooked in a jelly broth, then cooled and put in a terrine with a dash of vinegar and carrots for visual appeal and tangy taste.
