Comté cheese is mainly from Franche-Comté. Its 6-month ripening period provides a subtle taste. More than 300g of genuine Comté cheese with a Protected Designation of Origin (PDO) is needed to make one kilo of wafers. When incorporating the cheese, our chefs have added a pinch of pepper which discreetly enhances the flavour of this noble cheese.
