Product Description
Aligot is a culinary speciality of the Aubrac region, made only from fresh Aubrac tomme, potatoes, cream and salt. It is guaranteed to be free of colourings and preservatives. The cows' feed is guaranteed GMO-free (<0.9%). The cows are of the Simmental and Aubrac breeds, the latter having been reintroduced into milk production. They feed on grass in the summer and exclusively on hay in winter.
The production of Aubrac aligot provides a living for around a hundred farming families and a hundred or so employees in the rural area of Aubrac. Producers receive a premium for the quality of their milk. New producers who wish to set up can take advantage of an adapted support system. Financial aid is also available for investments, as well as in the event of drought or natural disasters.
