Brillat-Savarin is a triple cream cheese made from raw or pasteurised cow's milk. This soft cheese with a bloomy rind originates from the village of Forges-les-Eaux in the department of Seine-Maritime in Normandy. It is made from a lactic curd enriched with cream. The ivory-white paste is fine, homogeneous, moist, and unctuous, providing an incredibly melting sensation in the mouth. Brillat-Savarin has a delicately salty and slightly acidic taste with fresh aromas of butter and cream. As it matures, its taste becomes more distinctive with more assertive butter notes in the middle, hazelnut aromas, and a mushroom scent on its rind.
