Brillat-Savarin is a triple cream cheese made from raw or pasteurised cow's milk, soft and with a bloomy rind, originating from the village of Forges-les-Eaux in the department of Seine-Maritime in Normandy.
It is made from a lactic curd enriched with cream.
its ivory-white paste is fine, homogeneous, moist and unctuous, incredibly melting in the mouth.Brillat-Savarin has a delicately salty and slightly acidic taste with fresh aromas of butter and cream. As it matures, its taste becomes more distinctive with more assertive butter notes in the middle, hazelnut aromas and a mushroom scent on its rind!
