
Description
A nourishing, one-pot stew of earthy lentils, wilted greens, and smoky Toulouse sausage — quick and wholesome.
Ingredients:

4 Toulouse sausages, cut into chunks

200 g lentils (green or brown), rinsed

1 onion, diced

2 garlic cloves, minced

750 ml vegetable or chicken stock

150 g kale or spinach, chopped

1 tsp smoked paprika

1 tbsp olive oil
Instructions:

In a large pot, heat oil and brown sausages. Remove and set aside.

Cook onion and garlic until fragrant, stir in paprika and lentils.

Return sausages, add stock, bring to a simmer, cover, and cook ~30 min until lentils tender.

Stir in greens 5 min before end, cook until wilted.
