Recipe – Soupe de Poissons (Provençal Fish Soup)

Description

Soupe de Poissons is a traditional Provençal fish soup rich with Mediterranean flavors. Made with a blend of fresh seafood, aromatic herbs, and a light saffron-infused broth, it’s a perfect starter or main course for seafood lovers.

Ingredients 

  1. 600g mixed white fish (bones included)

  2. 1 onion, chopped

  3. 2 garlic cloves, minced

  4. 2 ripe tomatoes, chopped

  5. 1 tbsp tomato paste

  6. 1L fish stock or water

  7. 1 bay leaf + thyme sprig

  8. Olive oil, salt, pepper

 


 

Instructions

1. Sauté Base
In olive oil, cook onion and garlic until soft.

2. Add Tomatoes
Stir in chopped tomatoes and paste. Cook 5 min.

3. Add Fish & Herbs
Add fish pieces, bay, and thyme. Stir 2 min.

4. Add Stock
Pour in stock. Simmer uncovered 30 min.

5. Blend & Strain
Remove herbs. Blend soup with fish. Strain through fine sieve for smooth texture.

6. Adjust Seasoning
Salt and pepper to taste.

7. Reheat Gently
Warm before serving.

8. Serve with Rouille & Croutons
Optional: spoon of rouille, crusty croutons.
