Product Description
This small orange or white cone-shaped cheese is named after the capital of the Avesnois, near Maroilles. Boulette d'Avesnes is made almost entirely from broken over-ripened Maroilles (gaffus) and unripened Maroilles. These Maroilles pastes are reground and flavoured with pepper, salt and tarragon before being shaped by hand into a cone. Cht'i Roux is a cheese made from raw cow's milk, with a supple paste and a beer-brushed rind. Established since 1990 in the heart of the Boulonnais region, the Fromagerie Sainte Godeleine of the Bernard brothers specialises in the production and maturing of raw cow's milk cheeses.
