This West Indian black pudding is presented in 6 parts for a more divided consumption. They can be served as an aperitif or cooked as a main course. Be aware that the black pudding is cooked slowly (otherwise it risks bursting), whole in the pan or on the grill, for about ten minutes. It goes very well with mashed potatoes and cooked or mashed apples. Black pudding is a traditional food in French cuisine. It is to be classified in the category of cold meats and is therefore characterized, like most of them, by its richness in protein but also its fat content.
